jibing (gybing) is unrealistic
Gybes (jibes) seem to be based on the apparent wind angle with respect to the boat when they should be based on the apparent wind angle with respect to the sail. Even if gybes were with respect to the boom angle instead, it would still be an improvement.
I should have to sheet in around a buoy when jibing. If I allow a slack main sheet jibe, it should take down the rigging or at least break the boom on the big boat.
Yes! Gybing definitely breaks the immersion for me. Would love to see it more realistic.

I sheet in hard instinctively before a gybe, and I notice that the result is the boat speed drops so low so suddenly that I lose steerage to complete the turn - the only way to gybe successfully seems to be just letting it smack over, structural integrity (and decapitation risk) be damned
