Need wind gusts and wind changing direction

Maybe its something I'm doing wrong? It seems in all the races the wind is coming from the same direction, and I can't tell that there are gusts and lulls happening. These throw some unexpected conditions into a race, and the better sailor knowing how to react, wins, rather than using the same pattern of angles each time.
